Yes indeed that would be an excellent solution with the DateTimeViewInterpreter.

I would also be able this way to highlight weekends, holidays or other special days for my app

In fact the first column with the hours should have the width of the longest label/view. Then the day columns should have the width of the widest header label/view.

The width of the days columns is based on the number of days that are shown. That shouldn't be dynamic.
And the main thing of this issue could be solved with a DateTimeViewInterpreter which defaults to a DateTimeTextInterpreter which has an instance of DateTimeInterpreter to render the text.
