For example, you can hold token in a variable, which captured by function and then, just assign new value to the variable.

const token = 'Bearer xxxTOKENxxx'
api.on('request', function(xhr) {
    xhr.setRequestHeader('Authorization', token);
});
setTimeout(() => token = 'Bearer xxxNEW_TOKENxxx'), 1000); //after that, next api request will contains new token
