I would recommend using cordova-plugin-media for recording as it uses native conde instead of an intent to another app, as the user might not have any of the listed apps. This is a problem starting on android 8 where it seems the stock app was removed.

Huawei P8 and P10 can succesfully record with this plugin

Hmm thanks for sharing @jcesarmobile. Will the cordova-plugin-media-capture not be updated then for use with Android 8.0? If that's the case, then we must indeed switch to the cordova-plugin-media instead..

There is no fix other than using native code instead of the intent, but that code is already on cordova-plugin-media, so I don't think it will be duplicated here.
It's not an Android 8 problem per se, just looks like Google removed the stock recording app and vendors are supposed to put their own, but some of them didn't, or put one that doesn't work as expected as sony app
