I had the same issue.
According to this stackoverflow answer https://stackoverflow.com/questions/62421123/python-dotenv-could-not-parse-statement-starting-at-line-2/68281615#68281615

"For me the problem disappeared when I deleted space after equality sign and removed apostrophes (') and quotation marks (") from my .env file. So instead of this .env:

FOO = 'something'
BAR = "something_else"
Try changing .env to:

FOO=something
BAR=something_else"

I removed ' from APICURIO_UI_VALIDATION_CHANNELNAME_REGEXP and the error was fixed

Yes, unfortunately this project is getting a little bit stale. We are hoping to improve the quick start/ deployment situation soon. We will probably need to reduce the number of different deployment options we have. There are simply too many of them for us to maintain right now.
