If I understand you question correctly then you need a disassembler, like zydis, capstone, etc...

I want to convert a byte string I read from memory back to assembly code.
As far as I understand, it is not possible to do this in this project.

yes, asmjit is not a disassembler, it's a tool to assemble code.
Maybe it will get a disassembler at some point, but now it's not on roadmap.
