Yup, that's how you can do it. Sorry for the ignorance. If anyone cares...

// mark all taggings for deletion so that when the post is "persisted", they go away

I think I see why Example 1 and 2 won't work. When the relationship::persistForeignRecordSet() is called, it has no knowledge of records that have been removed, so they are untouched. I think I need to figure out how to instead mark them for deletion and see if that works.
