As a type designer I should never change the width of Greeks to full-width, even though it gains metric compatibility with SimSun.
Glyph width should NEVER linked to the bytes used in storage.

I do not know. I think you should contact the author of Org mode and give options to decide, in your current mono-space font, whether non-ASCII European characters are full-width.
