For other readers, I was able to get around this in a sort-of convoluted way but that works.
No timestamps in a save:
var saveWithoutTimestamps = function(Model, modelAttributes, saveAttributes, saveOptions) {
var model = new Model(modelAttributes);
model.hasTimestamps = false;
return model.save(saveAttributes, saveOptions);
};
var Model = ...;
saveWithoutTimestamps(Model, { attr: "value" })
// No createdAt or updatedAt is set
.then( ... )
.catch( ... );
Optional timestamps in save
var saveModel = function(Model, modelAttributes, saveAttributes, saveOptions) {
var model = new Model();
var timestamps = model.timestamp(saveOptions);
model.hasTimestamps = false;
saveAttributes = _.defaults({}, saveAttributes, timestamps);
model.set(modelAttributes);
return model.save(saveAttributes, saveOptions);
};
var Model = ...;
saveModel(Model, { attr: "value" }, { createdAt: new Date() })
// createdAt is set to the date passed in
// updatedAt is set to the default value normally set by the model.
.then( ... )
.catch( ... );

Wouldn't this work?
var MyModel = Bookshelf.Model.extend({
hasTimestamps: true
})
new MyModel({foo: 'bar'}, {hasTimestamps: false}).save()
from bookshelf.
Possibly. I wasn't aware you could pass options into a model like that.

I also don't know how long that has been supported, but it's there: http://bookshelfjs.org/#Model :)
