I think I've figured out how to extract the samples. I'm leaving my solution here just in case anyone else has the same question.

# model is the output of the fitted model
# extract posterior samples
samps <- as.data.table(model$fit)  # dimensions: samples by parameters
# convert to long form 
samps <- melt(samps, measure.vars = names(samps), variable.name = "param", value.name = "samp")

# function to do the above
get_samples <- function(model, parameter = NULL) {
    samps <- data.table::as.data.table(model$fit)
    message(paste0(ncol(samps), " parameters. ", dim(samps)[1], " samples each."))
    samps <- data.table::melt(samps, measure.vars = names(samps), variable.name = "param", value.name = "samp")
    if (!is.null(parameter)) {
        message(paste0("Returning only samples for ", parameter))
        return(samps[param == parameter])
    }
    return(samps)
}
