A few days back I've cloned this repository and modified the entrypoint.sh script - plus several other changes in the meantime.
Every time the container starts, the latest version of the chia-blockchain is fetched. It will trigger the bash ./install.sh if a new version is found. The commands I've found in the official INSTALL file in the Ubuntu section.
The docker images are built with Ubuntu 21 and Python 3.9 on arm64 and amd64. I've made them available on Docker Hub gldecurtins/chia-docker so that I can run it on my Synology NAS.
So far it works pretty well. I was also using it on my M1 Mac Mini for a while, but plotting speeds are not as fast as without Docker.

FYI: I think it has been fixed, the current version at the time I am writing is 1.1.6.dev0
