This is exactly what "--entrypoint" is for:
docker run -it --entrypoint <your_command>

Please don't change the default entrypoint (as suggested in #77).

So is chia an executable or is it something that runs. If it's the latter (which is how it's currently set up), it should be CMD

The main purpose of a CMD is to provide defaults for an executing container. These defaults can include an executable, or they can omit the executable, in which case you must specify an ENTRYPOINT instruction as well.
