Ditto. Is this going to be fixed? I use quick edit to edit a custom taxonomy, and in the list it appears as a date. When I go in and edit the post the normal way it's fine, but I have to re-save there to get the admin columns showing correctly again. I have the pro version.

Unfortunately this is a limitation with WordPress, they don't allow to modify the row when it's ajax ( using quick edit ) request is being fired.
I have looked at WooCommerce and other major plugins, but none have been able to solve it either. If you know any other plugin (which add columns) and managed to solve this issue, I would happily take another look at this.

Version 2.1.5(I assume that applies to the latest 2.1.7 as well) of WooCommerce doesn't have an issue with it's custom columns. I'm not sure whether they're using a custom posts list table walker or not.
I would look into their implementation, but I don't have any free time at the moment. If you are unable to take that on, let me know in the comments and I'll set some time aside in the next week or two to see if I can do a pull request that fixes the issue.
