I am happy to help. I went ahead and scheduled a call... if you no longer need the assistance, please cancel. Also, before we dive down this hole it may be advantageous to look for similarities in all of us experiencing this issue. Here are my specifics:
-WordPress version: 4.9.8
-WooCommerce version: 3.4.5
-Theme version: Avada 5.6.2
-Coinbase Commerce version: 1.0.1

I also get this error but the logs suggest the pricing type is being passed correctly. Would be great to have this sorted so we can offer this payment type to customers.

I send [pricing_type] => fixed_price
and get the error
Error response from API: Required parameter missing: pricing_type

Root cause has been identified! We'll be pushing a fix soon. The error is thrown if your Site Tile or Tagline has an apostrophe 🤦
