Yes. You can exclude using the Control Center playbook and remove the monitoring interceptors from the respective components.

You could also try setting these variables

confluent:
  package_name: confluent-platform-oss-2.11
  support:
    customer_id: anonymous
    metrics_enabled: false

In 5.1.x branch and 5.x version on CentOS, the package name is confluent-community-2.11:

        # confluentinc
        security_mode: plaintext
        confluent_version: "5.0.1"

        confluent:
          package_name: confluent-community-2.11
          support:
            metrics_enabled: false

Yes. These are the enterprise installations.

I'm saying it's able to be overridden, via those vars. I went ahead and showed what to set, and what're the defaults

Note: Enterprise installation doesn't add that much for the components listed in the initial post. You don't need a license to install enterprise version or have those packages sitting idle on disk

I had trouble to start Kafka with community installation.
I've had to set this config to empty:
