The compiler instantiates it's own $scss compiler object. So your functions file won't actually affect the plugin's compiling. To do what you have above, you'll probably need to fork the plugin and make changes to the class-wp-scss.php file.
You could grab values stored in the wp_options tables too and pass them to the object in the wp-scss.php file.
Does that make sense? Unfortunately, I'm really strapped for time right now. Sorry I can't be of more help!

Was this feature ever added? Interested in using the plugin, but may be easier just to use the leafo compiler without the plugin if this hasn't been added.
