I think this may have something to do with still supporting country names for simple_form's sake. Let me take a look.

This is a problem with South Korea not being a supported country name in https://github.com/hexorx/countries
If you switch to country codes, you should be fine. I've added a mechanism to raise an exception when an unrecognized country name/code is passed in that I'll be pushing out in the next bugfix release.
If you're switching between 1.3 and 2.0 please read the upgrade notes so you're aware of the changes.
