Thanks for using Material Tailwind, for each component there is a color prop that let you to change the color of components, for the dropdown component you can use the following link and check the available colors for the component: Dropdown.
For the className feature currently we have it for most of the components and we will make it even better on the next updates of Material Tailwind.
