Consider using immutable.js to handle data immutably

This is on standby. Turns out to be a bit harder to refactor into our code than I thought so this may be a bigger project. It's not in the critical path for this week.

After investigation, immutable js isn't the right solution. Instead we should enforce immutability through code review, tests and utility functions that minimize the room for error.

I implemented it in a smaller project and realized quickly that it may actually reduce the reusability of components.

There are also many libraries that will help with immutability without requiring dumb components to import the library. For now, we'll monitor this and refactor code to make handling immutability easier where necessary.
