Thanks! It works perfectly for dynamic Content-Type headers now. But it seems there's one case that still doesn't work - fixed strings like this:

        "default": {
          "statusCode": "200",
          "responseParameters": {
            "method.response.header.Content-Type": "'text/html'"
          },
          "responseModels": {},
          "responseTemplates": { "application/json": "$input.path('$')" }
        }

In this case the plugin sets the Content-Type to 'text/html' (with single quotes around it). The correct value would be text/html (without quotes).

Doesn't the unquoted version work on APIG? Please do not close this issue, I'll work on it later, thanks for the help @arabold !

The unquoted version wouldn't work as APIG needs to distinguish between a hardcoded value ('text/html') and a dynamic one (integration.response.body.contentType). The latest version works perfectly though! Thanks again.
