As I noticed, it does work with the double tap but for pinch zoom you could change the MAXIMUM_ZOOM value in Util/Constants.java as a quick workaround. I just came to submit the same issue ;)

This issue still seems valid. Settings a max zoom higher than the default does nothing.
This seems to be the case for both pinching and double taps, no zoom beyond the default. Setting lower max value works as expected.
Tested on 2.8.1
from androidpdfviewer.
