Here's current usage text, for reference:

usage: /usr/local/bin/docker-php-ext-configure ext-name [configure flags]
   ie: /usr/local/bin/docker-php-ext-configure gd --with-jpeg-dir=/usr/local/something

Possible values for ext-name:

We should probably also document pecl install <xyz> while we're at it (at least note that pecl is actually available).
