To keep things simple, the build process always generates a new keystore, hence the reference to obj/Debug/debug.keystore.

If you don't want to use the debug keystore, you need to provide your own and let the Mono for Android toolchain now about it:

It involves editing your Project.csproj file and adding <PropertyGroup> properties, e.g (using the values from your above keytool invocation):

    <AndroidKeyStore>True</AndroidKeyStore>
   <AndroidSigningKeyStore>~/.android/debug.keystore</AndroidSigningKeyStore>
   <AndroidSigningStorePass>android</AndroidSigningStorePass>
   <AndroidSigningKeyAlias>androiddebugkey</AndroidSigningKeyAlias>
   <AndroidSigningKeyPass>android</AndroidSigningKeyPass>
</PropertyGroup>

I've updated the GoogleMaps sample so that it includes a public.keystore file and uses that for signing the application. Including a public.keystore allows the build to complete when the developer doesn't have a ~/.android/debug.keystore file (which makes it easier for others to build the project), but likely is not advisable for production apps. :-)
