Hi, you can just change the container versions in the docker-compose.yml file. For example, you can write :latest instead of :<version_number> for TheHive, Cortex and MISP. However, I can't assure you that everything will 100% work since I've never tested ThePhish with those newer versions.

Do you have an update about if it works? I want to test it as well to see if it works or not.

I cannot confirm if this is working on Windows or not. I have issues with Cortex as it give many errors on installation of Docker.

Windows is not officially supported at the moment.
