The decision behind the behavior: there is no point parsing (performance) or showing a value which is not set, the developer knows what fields to expect and can check if the values are set.
Agreed, it can be confusing to some. As long as we have an option, we can allow empty fields to be included. Please send a pull request, with options.includeEmptyFields set to false, by default.

Thanks for the quick reply and when you put it like that it does make perfect sense, particularly if you are dealing with non nested field params.
