I think you should start reversing Instagram private api (sniffing instagram requests).
But this is not allowed by instagram terms of service.

I think the issue here is the phone verification, I could use a temp service to handle email verification but the emails are also randomly generated

A nice way to email verification would be using a domain ex: "[email protected]" and a catchall email for "mydomain.com" then you will have all email verifications sent to the same email.
