Hi. Gulp is more than just fast - it's very customizable and extendable and gulp-watch is perfect example. You can achieve per-file rebuilding with built-in watch functionality, but you also can use this plugin, that provides watching with more options for edge cases.

If you using this plugin, then emit option is what you looking for. By default gulp-watch will emit only changed file down the pipe and CoffeeScript will not recompile whole watch scope.
