Sorry for that. English is not my native english, so I can't judge how well this phrase describe situation.

This means - when you do gulp.src('scss/**/*.scss').pipe(watch(function(files) {}), gulp enumerates files inside src and piping them one-by-one into watch. In this case watch have no idea, what pattern were you using to get those files, so it can not watch for new *.scss files or sub-directories, that can be created in scss directory. But when you give glob option to watch like this: watch({glob: 'scss/**/*.scss'} - watch becomes aware about pattern, and will tell you, when new files or directories appears under scss dir.

No worries on english. This can be rephrased as:

gulp-watch will pipe files matching glob downstream, and begin watching them. Moreover, any newly created files that match glob will also be piped downstream, and be watched for changes.
