Sorry, should have clarified, when I mean it breaks, it doesn't really 'break', it just doesn't continue down the pipeline. Nothing else gets logged after concat.

gulp-concat is expecting end event to happen and you using gulp-watch in endless stream mode. So it will never end working. Check out batching mode instead,

Unfortunately, running it in batch mode doesn't seem to detect new files like the endless stream mode, but I'll get by just restarting the process. Thanks again for your explanation and links.

Stream mode should not detect them either, unless you are using glob option, which is available in batch mode.
