It does look like I add an Nginx rule to redirect the YAML request to a new version of the file, which has the updated paths:

	# we point to an updated copy of the OpenAPI YAML file which has updated paths
	location /greenmail/greenmail-openapi.yml {
		alias /path/to/modified/greenmail-openapi.yml;
	}

So instead of the web server grabbing the greenmail-openapi.yml file from the JAR, it grabs my modified copy.

This appears to make it all work correctly.

Another option that worked for me was doing using the ngx_http_sub_module module in Nginx to just modify the response:

# this will re-write the YAML file and replace the locations with the actual path
sub_filter_once off;
sub_filter_types application/yaml;
sub_filter "/api/" "/greenmail/api/";

Since I've found a few workarounds, I'm closing this issue.
