It highly depends on what task you want to train. Do you want to identify the individual teeth or detect the diseases?
A combined approach is probably not possible with pure COCO. That's the reason the authors adapted the format.

The impressively good code from the winning participants also contains code to preprocess the DENTEX dataset including converting it to COCO and YOLO. You should take a look at this.
