I managed to build it properly now after upgrading cordova-android to 8.0.0 :)

Yeah, I ran into that too. As far as I can tell, the XML is generated properly but cordova-android is buggy when adaptive icons are used.
I ran into the "Path must be a string. Received undefined" while digging into Cordova code. I also ran into this issue: #5 (comment)

Yep, let's close it. I just have to check how these adaptive icons will work together with older flat icons, but that's another story.
