Prep

  • Olive oil
  • Seasoning to taste. I like to use crush black pepper and sea salt flakes.
  • Garlic powder
  • Fresh thyme and rosemary

Cooking

  • Heading to 57°C internal temperature with the help of my Meater+ probe. Medium-rare.
  • Used all four gas on medium to low for the first 15 minutes to brown.
  • Turned off the middle two gas and am hitting 180°C temperature with both outer gas just above their low setting.
  • Note: My BBQ thermometer is placed above the middle two runs so reports higher/lower temperatures depending on if they are on. I plan to also have an ambient temperature in the lid.

Here is the cook shared via Meater.

You can see when I turned off the middle to gas fires I lost the temperature. I will try one next time to get the temperature to remain constantly 180°C rather than lowering and exceeding 180°C.

I think this was the perfect side of medium-rare for me. The slither that I just tried is beautiful. The herbs come through with flavour and smell.
