Research

  • Notice in the pictures above how thin the focaccia is and the delicious crust. Also how the tips of the onions have burnt.
  • Odette said to use big white onions and to soak them in water if I find them strong. They likely use sourdough and scatter salt and oil freely (the best way).
  • She also reminded me of the name of the bakery [Panificio Caligine Giovanna](Panificio Caligine Giovanna).
  • Here is a sourdough starter I will try.

Ingredients

  • 2 1/2 cups water
  • 2 1/4 tsp yeast
  • 2 tbsp olive oil
  • 1/2 cup semolina
  • 5 1/2 cups flour

Method

  • mix the dough, flour surface to need until it sits upright in a bowl
  • rest in a bowl with some olive oil (cover with cling film) 90mins
  • flat/roll to baking tray size.
  • Line tray with paper with some semolina and then add the dough to the pan.
  • Rest 90mins covered with a towel
  • Dimple the bread for even bread
  • Slice onions and drizzle in olive oil before adding to the dough
  • Add salt.
  • Add some water mist to the oven when cooking
  • Bake for 25 mins

Ingredients

  • 1 cup water
  • 1/2 tsp yeast
  • 2 cups flour
  • 1/2 tsp salt
  • 1 tbsp olive oil

Method

  • Mix.
  • Rest covered for 30 min
  • Stretch and fold on an oiled surface. Cover in oiled cling film.
  • Repeat 3 times resting 30mins each time.
  • On the last fold place into an oiled bowl
  • Cover and rest for 24 hours in the fridge
  • Parchment paper a baking tray and add oil
  • Stretch the dough onto the tray with finger tips and rest for 30mins covered
  • Prepare the onions, salt and oil
  • Top the dough with the mix
  • Bake in a preheated oven for 20mins at 260c
  • Brush with oil

Attempt 1

Ingredients

  • 1 warm cup water
  • 1/2 tsp yeast (saf-levure)
  • 2 cups flour (Molino Grassi la farina per pizzae focaccia)
  • 1/2 tsp salt
  • 2 tbsp olive oil
  • 1/2 cup semolina

Method

  • Mix dough
  • Rest for 90 mins
  • Stretched onto a sheet of baking paper and a further rest for 90 mins
  • Chopped onions and soaked in olive oil for 15 minutes
  • Spread the onions over the top of the flat dough with an excessive pouring of olive oil and salt
  • Baked at 220 °C for 20 mins

Reflection

  • Too much salt. Lovely balance of onion. The dough wasn't crispy on the underside and was a little thicker than the original. The onions burnt just as I had hoped like the original. The smell, while it was baking, was just fabulous.

Dough rested in a room with an ambient temperature of 21°C

  • Ingredients for a 38x28 cm pan:

First dough

7 gr fresh brewer's yeast
100 gr flour
100 gr lukewarm water

Second Impasto

7 gr fresh brewer's yeast
100 gr lukewarm water
3 g agave syrup
7 gr salt up
20 gr extra virgin olive oil
6 medium onions

Method

  • Prepare the first mixture.
  • Melt the yeast in warm water. Add the flour a little at a time. Let it rise for three hours.

Second dough

  • Dissolve the yeast with four tablespoons of water taken from a total of 100 gr.
  • In a bowl, mix the syrup, salt and oil.
  • Add the first dough leavened for three hours and add a little flour at a time.
  • When the flour is absorbed, add the dissolved yeast.
  • Continue to add a little flour at a time. Knead for 15 minutes.
  • Make a few folds to give strength to the dough. Form a ball and let it sit for 15 minutes.
  • Transfer the dough onto a pan greased with oil.
  • Leave the dough to rise for 1 hour.
  • In the meantime, finely slice the onions. Season with a little salt and oil.
  • After an hour of leavening, spread the dough evenly.
  • Cover the surface with fine salt and let it rest for 20 minutes.
  • At this point pour 4 tablespoons of warm water and oil over the focaccia base.
  • Make the holes by pressing energetically with your fingertips.
  • Cover the focaccia with the onions and let it rise for another hour.
  • Cook in a hot oven (mine is ventilated) at 190 ° for 40 minutes.
