I figured it out. I just had to remove part of the query:

var update = {
  $inc: {
    resellers.$.inventory: 1
  }
};

Product.findOneAndUpdate({'resellers._id': 'zxcv'}, update, function (err, product) {

  if (err) {
    reply(err);
  }

  reply(product);
});
