I don't see any quick blocker. I haven't checked.

You need to update the docker-compose to connect to your own database, you can remove the section about the provided PG container. You would need have environment variable to define PG host, PG user and password etc. (you have environment like POSTGRES_USER in the readme.md file)

You can also expose your hostname to the docker container i.e https://github.com/compose-spec/compose-spec/blob/master/spec.md#extra_hosts and then define your env variables to connect to the DB internally

Another option might be to just run the docker-osm stack and expose it to your database via foreign data wrappers of some sort... But the feasibility and sensibility of such an approach would be largely context-specific
