disableDefault() - expecting disables the default metadata that is set as part of DocumentWriteSet batch default but I see this is disabling the System default metadata too.
Please let me know if my understanding is incorrect.

It appears everything is working correctly in the Java layer. The underlying REST layer is working as expected, as you said, disabling system default too. We're having discussions about whether the behavior should continue that way.
