I'm also trying to configure config.json through the operator.
It seems this is impossible. The suggested change could work, but the volumeMounts and volumes are not exposed through the operator. Although the best solution would be to just expose the configJson attribute as in the teams chart.

Mattermost Operator sets MM_CONFIG env var based on the configured database. This makes Mattermost store and use configuration from the database. You can read more about it in Mattermost docs.

We currently do not support using config.json with Operator.

We are not going to change it in Operator for now and workaround is available, therefore I am closing the issue.
