Never mind, I just figured out I can configure columns directly using the fields option ...

Yes that is the right way. You got me worried there for a minute. The trNgGrid uses the row/cells in the thead, tbody or tfoot as templates, so no repeats there.

is there a way to have labels different from the field names if you use the fields attribute ?
like fieldLabels=[...], or fields=[{name:xxx, label:yyy}]

You'll have to go through TH elements and using the field-name and display-name attributes.

You could also go through localization.

If the list of fields is dynamic, but all the fields are known, you can define them all through TH elements, and dynamically restrict them via the fields attribute.

More powerful mechanisms will become available as a result of #91.
