Yes. I would recommend taking a full folder backup first.

OK cool.... apart from the config files, where are the KB articles stored?

In the /data/kb.db and users are in /data/users.db

do you need to run npm install after copying new files over?

Yes it's always a good idea. I've added some other dependencies so it's required in this case.
