I noticed this too while we're working on developing MunkiServer. Because a single computer might have several catalogs and manifests associated with it during our development process... we're going to have quite a bit to clean up.
In some ways this is a security problem because users MAY have been associated with it in the past will still be able to see old catalogs and use that to potentially get software that they may not be entitled to.
