vim.o.foldopen = 'all'

It works if you :set foldopen=all
. However that's a global option and cannot be added to the ftplugin.

Is there a reason we shouldn't have left mouse click expand folds by default?

@justinmk I didn't realize that left-clicking unfolded in Neovim. I intuitively feel that Neovim is primarily geared towards keyboard usage.
