24 hours later, I can now confirm that only restarting the app container is enough to postpone the issue for another 24 hours.
Looking at the issue you linked, this looks familiar from my logs:
PHP Fatal error: Allowed memory size of 1073741824 bytes exhausted (tried to allocate 20814848728 bytes) in /var/www/owncloud/lib/private/Files/Storage/Local.php on line 327
I'll assume it's not container related and chime in there. Thank you!

Any clues in your logs or cron job output?
I don't think it's image related. It might be one of the upstream matters like nextcloud/server#42793 though
