No, this is not possible :(
This is because the GWT generator has to know the type at compile time. There is currently no way to give the type at runtime because there is no reflection.
The best I could do is add a new ObjectMapperFactory interface for example. A bit like RequestFactory. You create an interface extending it and add all the getter you want returning ObjectMapper. Call GWT.create on it and you now have a factory that can give you all the mapper you need.

I have a further question - is GWT Jackson able to deserialize nested custom types? Suppose I have a class Organisation, which holds one or many Employees, each of which is a subclass of Employee. If I get a ObjectMapper, would it be able to load JSON describing an Organisation with all its Employee instances populated?

Yes it can like Jackson. If you have subclass, you need to add subclass info though.
