We are dependent on nodejs/node-gyp#193
When it is resolved and node-gyp uses version 3 I see no further impediments to get rid of Python 2 😉

This should be fixed in the next release of nodegui since its switching to cmake as a build system instead.

Or we could replace https://github.com/nodejs/node-gyp/ with https://github.com/cmake-js/cmake-js

It works exactly like node-gyp, but instead of gyp, it is based on CMake build system.

Good news, node-gyp v5.0.3 is finally and officially supporting Python 3.

On its tests here, all tests (100%) are green on Python 3.7 🎉

It includes the pull request nodejs/node-gyp#1815, that uses two new environment variables: NODE_GYP_FORCE_PYTHON and NODE_GYP_PYTHON3, that conditionally enables Python 3.
