I also had some moments with a similar mistake:

public class Test
{

    public virtual NpgsqlDateTime CreationDate { get; set; }
}

modelBuilder.Entity<Test>(
    prop => 
    { 
        ...
        prop.Property(t => t.CreationDate).IsRequired().HasColumnName("creation_date");
        ...
    }
);

DB type:

creation_date timestamp without time zone NOT NULL DEFAULT now()

This turned out to be related to npgsql/npgsql#1074, added some tests and hstore works almost perfectly.

Except when you attempt to put an hstore value in a where clause, in which case I ran into dotnet/efcore#5365.
