You need to recompile uwsgi-plugin-php with new PHP (e.g. phpapi-20131226).

Truthfully I don't want to pull uwsgi into this PPA, because it would bring a whole bunch of other stuff that I don't want and need there. I am sorry, but you are on your own here, e.g.
# add new PPA, so php5-dev 5.6.x is pulled in
apt-source uwsgi
apt-get build-dep uwsgi
cd uwsgi-*
dpkg-buildpackage -uc -us
should generally help.
