First of all you can enable logging with macros, so if you want to debug gestures open file gestures.c and define DEBUG_GESTURES macro:

You can also define it via ./configure script.
There are other logging macros in other files (enable logging in file you want to debug)
Logs will be printed to your Xorg.0.log file placed in /var/log/X11/ or ~/.local/. Search there for file Xorg.*.log (numer depends on your xorg instance id)
Then use xinput
with --list-props
and --set-prop
to change configuration during runtime without need to restart X11.

By reading this function you can track how props are mapped to values.
To test your changes, or simply to read new logs after you enable them, you have to recompile and install driver. I do it with dpkg-buildpackage -us -uc; and sudo dpkg -i ../xserver-xorg-input-mtrack*.deb
Then to test it I swap to new virtual console with Ctrl+Alt+Fn, log in as another user, and start new X11 instance with: startx -- :1
As a result I have two instances of X11 running: one with old driver, and second one with new changes.
I don't know whats wrong with your configuration, but maybe you can start with experimenting with Touch Pressure.
