This could be achieved by simply adding a conditional wrapper to the init method:

$(function(){
    if (document.documentElement.clientWidth > 720) {
        $('.parallax-window').parallax({imageSrc: '/path/to/image.jpg'});
    }
});

Though this wouldn't be dynamic if the user ends up changing the window size... If that is something you are looking for, some sort of destroy/suspend method would be needed. Unfortunately I don't have the time at hand to update my plugin, but I would certainly accept a pull request if you feel like adding it yourself.
