I can confirm that this issue does not occur in ubuntu bt occurs in pop os everytime i upgrade to 21.04
from cosmic.
I use a keyboard layout that was only available when using gnome-tweaks "show extended input sources". However, when I now enable this the Settings app simply closes whenever I press the plus button on Input Sources in the keyboard tab.
Thanks for pointing this out! I'm able to reproduce this. It seems to be an upstream bug in libgnome-desktop
which is fixed in the latest version from Gnome and in the current Debian package. The Pop!_OS package comes from Ubuntu. So it will be fixed if Ubuntu updates the package or we package for Pop!_OS.

Related upstream issue: https://bugs.launchpad.net/ubuntu/+source/mozc/+bug/1919455
Seems to be due to an update to Debian's debian-mozc
package.
No mention there of the issue affecting upgrades, and Ubuntu addressed it by a change to the livecd.

The debian-mozc
package is now patched to not add the input method automatically: https://github.com/pop-os/mozc
This should be fixed now.

I have another issue with input methods on pop-os 21.04, wondering if it is just me:
I use a keyboard layout that was only available when using gnome-tweaks "show extended input sources". However, when I now enable this the Settings app simply closes whenever I press the plus button on Input Sources in the keyboard tab.
