I've a similar problem. I'm using a model with subobjects, that can't be baked, probably because of the complex shape or size. The Object is around 200 meters by size in Blender - this may be an additional problem, but I'm not sure.
It would be really important to have an option to export materials "like they are" and just move the user bitmaps to the USDZ file.
@robmcrosby You may parse for the right bitmap format and stop exporting if there is no JPEG or PNG used in the materials.
